Butterscotch Blondies

I got this recipe in the mail from the grocery store a few years ago. These are really good. They're great for taking to pot luck dinners where they always seems to be an abundance of chocolate. Since the ingredients are ones that are normally kept in stock, these can be whipped up quickly at the last minute.


Butterscotch Brownies


1/2 cup butter (1 stick) softened
2 cups light brown sugar, packed
2 eggs
1 1/4 cup all purpose flour
1 tsp. baking powder
1/4 teaspoon salt
1 tsp vanilla
1/2 cup nuts (optional)
2 tbs powder sugar (optional)

Cream the butter and brown sugar in a mixing bowl. Add the eggs and beat well. Add the flour, baking powder, salt and vanilla (and nuts, if using) and mix well.

Spread into a greased and floured 13x9 baking pan. Bake at 350* for 20-25 minutes, or until a toothpick inserted comes out clean.

Cook completely. Dust with powdered sugar, if using, and cut into squares.
