Katherine Brooking, M.S., R.D., registered dietitian

I had a chance to interview Katherine over the phone (it was so exciting to have the chance to interview her!!!) and we had a nice little chat about nutrition.

Here are a few things I learned~

The new food guidelines are out (they are updated every 5 yrs, I didn’t know that!) and they have suggested that we double the amount of veggies in our diets. Katherine said one of the easiest ways she has found to do this is to just double the amount called for in a recipe! What a great way to make casseroles, soups and even quiches healthier!

Katherine said that in her travels she has found that other countries have some great ideas on cooking and preparing vegetables. She suggested branching out and preparing them in a different way~roasting them with a little olive oil and sea salt is super easy and healthy.

I was excited to try out these lite bagels! I loved all the yummy flavors! I’m a real bagel fan. I like bagels right out of the package, I like them toasted, smeared with cream cheese or made into a sandwich. I found the Bagel Thins to be wonderful each way. Don’t deprive yourself of a bagel, try Bagel Thins!

Nutritionist, Keri Glassman, author of the O2 Diet and Thomas’ Bagel Thins let me ask her some questions and here are her answers~

1. What is your best tip for making healthy eating easy and fun?

Pick your five favorite healthy foods and think of at least 2 ways to eat them in fun ways. Always keep these foods on hand. Maybe you love blueberries – you can make blueberry smoothies with almond milk, ice and a nut butter, or maybe you mash them up with cinnamon and use as a spread on a Thomas’ Bagel Thins bagel.

2. What is a quick chocolate treat that won't make me feel guilty?

I love a ½ ounce of dark chocolate! Cocoa powder is great too and is a source of antioxidants. Antioxidants help boost our immune system, protect us from heart disease, cancer and even prevent wrinkles! Make a hot chocolate with skim or almond milk, or mix some cocoa powder into a Greek yogurt for a chocolate “pudding”.

3. What is your favorite breakfast?

I’m busy, and a big on-the-go eater. I love nuts including pistachios, peanuts and almonds. So I like to spread some peanut butter and cinnamon on a toasted 100% Whole Wheat
Thomas’ Bagel Thins to get my whole grains and fiber in the am!It’s an easy portable option. Then, I grab a green tea skim latte.

4. How about your favorite grab and go snack?

I feel like I’m always eating, so what am I grabbing? Ha ha. I always have a bag of nuts, like pistachios and almonds, and fiber crackers with peanut butter. I also love a really good green apple with cinnamon.

5. What do you suggest when the munchies hit?

If you’re eating consistently throughout the day and you get the munchies, don’t think of it as a bad thing. You may truly need a snack! Sit down and have a real snack, preferably with
some protein for satiety and fiber to keep you filled up. Also, pinpoint your craving. Are you craving something sweet or salty? If you are craving salty, get something salty, with a health
twist, like air popped popcorn with parmesan cheese to satisfy that craving. Don’t try to “eat around” the craving.

It gives your body the fuel it needs to meet your busy schedule and skipping breakfast decreases your metabolism, and increases your cravings throughout the day! Studies have also shown consuming breakfast improves cognition and memory in children and adolescents making them able to concentrate and be more attentive in school. We all have some kid in us, so use this tip to your advantage!

Eat empowered
o Every morning when you sit down to breakfast (and every meal!), remember that each meal is an opportunity to get back in the game and stay on course. You should feel empowered by making the right choices. There are always healthier alternatives to the high-fat, high-calorie, nutrient-less options that we all tend to go for, and I always keep a healthy staple product on-hand to help me quickly make a delicious and nutritious meal.
