I got this recipe for Gluten, Dairy & Egg Free Chocolate Cake from I'm an organizing Junkie. She also has a recipe for frosting, and for making your own gluten free baking mix on the same page.
I have just recently gone gluten free, so I'm trying lots of recipes. This cake is so good! Chocolate cake is my favorite cake. So I know what I'm talking about. This cake has great flavor & texture. The kids that tried it liked it as well. They wanted more than a taste. :)
I only made half her recipe, since I'm the only one gluten free. So here's what I did:
Gluten, Dairy & Egg Free Chocolate Cake from I'm an Organizing Junkie
1 1/2 cups gluten free flour - I used a store bought gluten free flour
1 cup sugar
1 cup cold water
1/3 cup vegetable oil
1/4 cup cocoa powder
1 teaspoon baking soda
1 teaspoon white vinegar
1/2 teaspoon salt
1/2 teaspoon vanilla
In a large bowl, combine all ingredients and beat until well combined. I use a whisk, (since my mixer died). Pour into a greased 8 x 8 pan. Bake 30 minutes at 350* until toothpick comes out clean.
I think this cake is great for snacking without any frosting. It would be good with frosting or a non dairy whipped topping (or whipped cream if you can have it). I ate a piece (ok....two!) and I put the rest in the freezer. Cut into pieces, and layers separated by wax paper, so I can take out one piece at a time.
